Keto Blueberry Muffins
Keto Blueberry Muffins (203 kcal | P 10.2g | F 15g | C 5.4g)
Ingredients:
- 30g Proteus Nutrition Vanilla Ice Cream WHEY Protein Powder
- 100g Almond Flour
- 1/2 tsp Baking Soda
- 1/8 tsp Salt
- 100g Blueberries
- 2 Eggs
- 90g Yoghurt
- 40g Unsalted Butter (melted)
- 15ml Lemon Juice
- 1/2 tsp Vanilla Extract
Directions:
- Preheat the oven to 165°C. Sift Proteus Nutrition Vanilla Ice Cream WHEY Protein Powder, almond flour, baking soda, and salt. Whisk well and set aside.
- In a large mixing bowl, whisk together the eggs, yoghurt, melted butter, lemon juice, and vanilla extract. Ensure that the mixture is smooth and homogenous.
- Fold the dry ingredients into the wet ingredients. Add the blueberries and fold again to combine.
- Scoop the muffin batter into a lined muffin tray and bake at 165°C for 25 minutes. Let cool before serving.
