Recipe: Keto Blueberry Muffins

Keto Blueberry Muffins

Keto Blueberry Muffins (203 kcal | P 10.2g | F 15g | C 5.4g)

Ingredients:

  • 30g Proteus Nutrition Vanilla Ice Cream WHEY Protein Powder
  • 100g Almond Flour
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt
  • 100g Blueberries
  •  2 Eggs
  • 90g Yoghurt
  • 40g Unsalted Butter (melted)
  • 15ml Lemon Juice
  • 1/2 tsp Vanilla Extract

Directions:

  1. Preheat the oven to 165°C. Sift Proteus Nutrition Vanilla Ice Cream WHEY Protein Powder, almond flour, baking soda, and salt. Whisk well and set aside.
  2. In a large mixing bowl, whisk together the eggs, yoghurt, melted butter, lemon juice, and vanilla extract. Ensure that the mixture is smooth and homogenous.
  3. Fold the dry ingredients into the wet ingredients. Add the blueberries and fold again to combine.
  4. Scoop the muffin batter into a lined muffin tray and bake at 165°C for 25 minutes. Let cool before serving.
